Easy, Overnight Oven Baked French Toast

For years my mom has made us oven baked French toast for holiday morning breakfast. The minute she pulled it out of the oven, my brothers and I were ready to inhale it. It was so good that we were willing to wait to open presents until we ate breakfast….well almost ha.

The holidays are a bit complicated if you have food allergies. You have to either cook your own allergy safe dishes or find a few items to eat that are naturally gluten free……like salad…..let’s be real, its nearly impossible and who wants to eat salad on Thanksgiving or Christmas. When I started having to cut foods out of my diet, this French toast was one of the meals I was going to miss the most! Just smelling it and knowing I couldn’t have any was torture!

It can be difficult to find good recipes that are originally gluten free/sugar free/dairy free OR that include all three of these modifications. I have found that the best meals end up being the regular recipes that I modify to meet my needs. This recipe is a beginner level modification.

I am going to provide the original recipe and the “cleaned up” version. Directions are the same for both.

Regular French Toast

1 loaf (1lb) unsliced French bread, cut into cubes or ripped into small pieces

1 package (8oz) cream cheese, cut into cubes (optional)

2/3 cup golden raisins (or dried fruit of choice)

8 eggs

2 1/2 cups milk

6 tbsp. butter (melted)

Directions: Place half of the bread cubes in a 9 X 13 baking dish that has been sprayed with non-stick spray. Arrange the cream cheese and raisins evenly over the top and add remaining bread. In a large bowl, beat the eggs with milk, melted butter, and 1/4 cup of the Cider syrup. Pour egg mixture evenly over the bread. Gently mash it all down with a spatula. Cover with plastic wrap and refrigerate for 2-24 hours. Bake uncovered at 325F for 35-40 minutes. Serve topped with cider syrup.

Regular Cider Syrup

2 cups apple cider or apple juice

1 cup sugar 

2 tbsp. lemon juice

2 tbsp. plus 2 tsp of cornstarch

1 tsp. ground cinnamon

2 tbsp. butter 

Directions: In microwave safe bowl combine all ingredients except butter. Microwave for 3 minutes and stir, microwave for another 4 minutes and stir. Then stir in butter until melted. Syrup is done when its hot and bubbly.

Clean French toast 

2 loaves gluten free bread (I say two because GF loaves are generally much smaller), cut into cubes or ripped into small pieces

1 package (8oz) cream cheese, cut into cubes (skip if you can’t have dairy)

2/3 cup golden raisins (or dried fruit of choice)

8 eggs

2 1/2 cups almond milk

6 tbsp. butter (melted)

Clean Cider Syrup

2 cups organic apple juice

1 cup coconut sugar

2 tbsp. lemon juice

2 tbsp. plus 2 tsp arrowroot flour

1 tsp. ground cinnamon

2 tbsp. butter
